Coyote Creek Raw Honey

This collaboration brings together local organic honey from hives at Coyote Creek Family Farm in Collin County and barrel finishing at The Whiskey Blendery.  The raw honey was extracted and dumped into an expended Weller Full Proof barrel where it rested for nearly six months.  The end result is an explosion of flavor that combines the exceptional flavors of the base honey that has sweet notes of peach preserves and the savory barrel forward characteristics from the freshly dumped, whiskey soaked American white oak cask.
